We split one physical server into many isolated machines and make the whole thing manageable.
Buying a separate box for every job is expensive and hard to manage. Virtualisation splits one strong machine, so accounting, the database and a test environment sit on the same hardware while staying isolated from each other, and one falling over does not take the rest with it. Backups get easier too: you can snapshot a whole machine, which makes a restore a matter of minutes.

If an internet outage does not stop your work, the cloud is easier. For production, warehouse and till environments we put the server on site, and we do run hybrids.
In most cases downtime is under an hour and happens outside working hours. The old system is left intact, so if something goes wrong we roll back.
At regular intervals we restore the backup into a test environment and send you the result. Nobody can promise that a backup nobody has ever tried will work.
We listen to what you use today and where it jams, then send you what can be done in writing. If it already works well enough, we will tell you it is not worth touching.
